Dr.
Houston’s training and research interests are in the area
of health promotion and health education, particularly in the
areas of dietary change, obesity, and diabetes self-management.
As an adjunct faculty member, she currently teaches courses in
behavioral science. Dr. Houston received her undergraduate degree
in nutrition from Cornell University, Ithaca, NY, and graduate
degrees in nutrition (MS) and health services research (PhD) from
St. Louis University’s School of Allied Health Professions
and School of Public Health respectively. She also completed her
dietetic internship at St. Louis University. In addition to her
publications and presentation, Dr. Houston is very active in the
dietetics profession. She is currently the President of the St.
Louis Dietetic Association and serves on the accreditation site
visit team for the Commission on the Accreditation for Dietetics
Education (CADE) of the American Dietetic Association. She is
a member of the American Dietetic Association, American Association
of Family and Consumer Sciences, and Council of Administrations
in Family and Consumer Sciences.
